Banana Nut Muffins {oil & refined sugar free}

Is there a better snack than a muffin?!... I think not, especially when we're talking fluffy, banana nut muffins filled with pecans, walnuts and caramel-ly dates! Like pretty much every snack item I bake, these muffins are intended to be the perfect accompaniment to an afternoon cuppa and, while they taste just as fab as a slice of cake, they're made with great ingredients that never fail to taste amazing and give me enough energy to last until dinner. So if, like me, you're always on the look out for genuinely filling, but healthy and delicious afternoon snacks, these banana nut muffins are the perfect treat to bake up on a Sunday so that you're set with super tasty snacks for the week to come.

You will need:
- 125g spelt flour
- 125g plain flour
- 2 teaspoons bicarbonate of soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 flax eggs (2 tbsp flax & 6 tbsp water)
- 3 large ripe bananas
- 150ml almond milk
- 2 tablespoons smooth peanut butter
- 30g walnuts
- 30g pecans
- 7 medium dates
- 3 finely chopped walnuts (for topping)

Start by preheating your oven to 180 degrees celsius and lining a muffin tin with muffin cases.

Then, add your flours, bicarbonate of soda, cinnamon and nutmeg to a bowl and stir to combine.

Next, mash your bananas and add to your dry ingredients along with your almond milk and stir until you've got a well combined, thick batter.

To your batter, add your peanut butter and flax eggs and stir well.

Roughly chop your walnuts, pecans and dates then add to the mixture and stir to distribute well throughout the batter.

Now they're ready for the tins! Spoon around two and a half tablespoons of mixture into each muffin case and you should come out with nine large muffins.

Sprinkle each muffin with some finely chopped walnuts and place in the oven to bake for around 20 minutes.

After baking, allow the muffins to cool slightly while you pop the kettle on and make a cuppa and then you're ready to dig in to your sweet, fluffy and delicious banana nut muffins.
