It was back to normality this week, with a full week of work and university and in all honesty, I'm loving the routine! There's just something about a busy schedule that makes me feel so much more productive so after a jam packed week, I'm feeling like I'm finally back in the swing of things with work, exercise, studying and, well, everything. As with all busy weeks, I've been feeling extra tired and extra hungry, but plenty of good snacks and a lot of sleep have kept me on track, so here are some of the things that have made me smile this week!
Being back at university. After a very long and very relaxing Christmas break from university, classes started back this week and, surprisingly, I'm actually pretty excited about it. It's always nice to get back to a bit of structure after a while off, and I'm also really looking forward to the classes I've picked for this semester but, mainly, I am ridiculously excited that the end is in sight because this is my final semester at university, ever!
New KeepCups. Being back at university always means a dramatic increase in my caffeine intake because, running between work and university all week means that coffee is a must! When I'm buying coffee out and about, I always use a KeepCup and, for Christmas, Jay bought me a new large one because my medium just wasn't cutting it! With a dissertation to write and a lot of reading to do, I'm fairly confident that my new KeepCup is going to be my best friend this semester!
Pret acai bowls. Partly because I never remember to pack a lunch and partly because I felt like treating myself, I decided to grab a Pret lunch between classes on Thursday. Usually, I go for a soup but this week I felt like something a little fresher so I grabbed one of their little acai pots which, for their size, are actually surprisingly filling. They're packed with an acai smoothie, apples, bananas, crunchy granola and a ton of almond butter and they taste seriously amazing!
Peanut butter and apple slices. From the amount I talk about food, I'm sure sure it's pretty clear that I love food and have a massive appetite so making sure I always have healthy snacks on hand is a must! This week I've been obsessed with peanut butter and apples, I mean, its fruit and peanut butter, what more could you want?! I've found that pairing my fruit snacks with a healthy fat like natural peanut butter helps me to stay fuller for longer and, most importantly, it tastes great.
Blondies. This week I shared one of my favourite recipes for caramel apple blondies on the blog and it's no exaggeration when I say that these blondies have been making up the majority of my diet this week! They're so sweet, gooey and moreish and, paired with a cuppa, they've been making the perfect cosy treat to enjoy after a day of work and classes.
Lighter mornings. Although I'm definitely not a fan of the cold, the worst thing about winter, by far, has to be the darkness. You can wrap up and drink plenty of tea to avoid the cold, but there's really not a lot you can do about the darkness, so I've been beyond happy that the mornings have finally started to get a little lighter this week. We're still very much in the depths of winter, but seeing some earlier sunrises and later sunsets is making me feel like spring is almost here and that's making winter just a little easier to cope with.
Homemade pizza. For Jay and I, Saturday night is always pizza night, but as I've been dealing with a new food intolerance lately, the pizza from my usual take away is leaving me feeling not so great. But hey, I love me a pizza so I'm not willing to give up that easily and this week I decided to make my own pizza. I went for a spelt base with a ton of veggies and a generous sprinkling of nutritional yeast and it tasted bloody brilliant!
