For one serving, you will need:
- 4 slices of sourdough
- 1 flax egg (1 tablespoon flax and 3 tablespoons water)
- 100ml almond milk
- 2 tablespoons coconut sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 4 strawberries
- maple syrup to drizzle
- granola to garnish
- a dusting of icing sugar
Start by preparing your flax egg. Once thickened, add to a shallow bowl along with the almond milk, spices and coconut sugar and stir well.
Dip each of your sourdough slices in the liquid, ensuring that both sides are coated in the mixture, then transfer to a non stick pan.
On a medium heat, allow your sourdough to cook for a few minutes until the bottom side is golden, then flip and cook on the other side. As the French toast cooks, slice your strawberries.
Once cooked, transfer to a plate, top with your strawberries and granola then drizzle with syrup and dust with icing sugar.
