Vegan Sausage Rolls {blogmas day 5}

I'm not sure if it's a northern thing (because we really do have a Greggs on every corner) or a carboholics thing, but all good things come wrapped in pastry and whether it's a snack, meal or party treat, sausage rolls always make a great option! In all honesty, the sausage part of the sausage roll was always my least favourite part but since going vegan, I've put together a vegan 'sausage' roll filling that has all the flavour of the non-vegan option but is far more appetising (and healthier too)!

To make 9 medium sausage rolls, you will need:
- 1 roll of JusRol puffed pastry
- 1 tin of cooked green lentils
- 150g chestnut mushrooms
- 1 large clove of garlic
- 1/2 large white onion
- 2 tablespoons Essential Cuisine Concentrated Vegetable Stock
- 1 sprig sage leaves
- 1 tablespoon reduced sugar ketchup

Start by preheating the oven to 200 degrees Celsius and removing the pastry from the fridge to allow it to reach room temperature.

Next, finely chop your onion and mushroom and add to a pan along with your crushed clove of garlic.

Drain your lentils and mash with a potato masher until the lentils are well combined but still slightly chunky.

Add the lentils to the mushroom, onion and garlic with a splash of water and fry until the mushrooms are reduced and the lentils have browned.

Next, chop your sage and add to the pan along with the stock and ketchup and allow to simmer for around 10 minutes.

As the mixture simmers, roll your pastry out and cut the pastry lengthways into three equal pieces.

Once the mixture has simmered for 10 minutes, remove from the heat and separate into three equal portions. Spoon the mixture lengthways into the left side of each of your three sheets of pastry, then cover with the right side and seal with a fork.

Slice each of your large sausage rolls into three and transfer to a baking sheet to bake for around 20 minutes. For a party, you could slice your rolls into mini sausages, but bear in mind that this will change the baking time!

Once baked, you're ready to tuck into a (scarily realistic) vegan sausage roll!
