Refined Sugar Free Cranberry Jam {blogmas day 12}

As something of a toast addict, I go through jam pretty quickly and more often than not, I opt for a refined sugar free jam - not only because it's healthier but also because sugar free jam tends to have a more authentic, real fruit flavour that I just love! As of yet, I'm yet to find a sugar free cranberry jam so I decided to try my hand at my own festive jam because who doesn't want to add a little bit of Christmas to their morning toast?!

You will need:
- 200g fresh cranberries
- 2 clementines
- 300ml water
- 50g coconut sugar

Start by placing your cranberries and coconut sugar in a pan along with 200ml of water, then place on a medium heat and allow to reduce, stirring frequently.

Once the jam starts to thicken, add in the remaining water and the juice of your clementines then turn the hob on to a low heat and allow to reduce again.

Once reduced, allow to cool slightly then transfer to a container of your choice.

Pop the kettle on and put some of your favourite bread in the toaster, then spread generously with cashew butter and cranberry jam and enjoy a cosy, festive snack!
