Gingerbread Cupcakes {blogmas day 16}

Now that the season of pumpkin spice has passed and we've moved onto the, arguably even more delicious, season of all things gingerbread, I've been finding a way to squeeze ginger into all of my favourite foods! As the season of parties and never ending streams of office snacks, December seems like the perfect time to inject some gingery festivity into everyone's favourite treat - the humble but oh so moreish cupcake!

To make 12 cupcakes you will need:
120g dairy free butter
120g soft brown sugar
150g self raising flour
1 teaspoon bicarbonate of soda
2 teaspoons ground ginger
1.5 teaspoons ground cinnamon
1/4 teaspoons ground nutmeg
2 flax eggs (2 tbsp ground flax with 6 tbsp water)
1 tablespoon black treacle
1 tablespoon golden syrup

For the gingerbread frosting you will need:
150g dairy free butter
300g icing sugar
3 teaspoons soft brown sugar
2 teaspoons ground ginger
2 teaspoons ground cinnamon
12 vegan gingerbread stars to decorate

Start by preheating your oven to 180 degrees Celsius, then cream together your butter and sugar until light and fluffy.

Once combined, sieve in the flour, bicarbonate of soda and spices and stir until totally combined. Then add your flax eggs and syrups and stir well.

Now place an even amount of mixture into each cupcake case and place in the oven to bake for 20 - 22 minutes.

While the cupcakes bake, prepare your frosting. Start by combining half of your icing sugar with the butter and once combined, add the remaining icing sugar, spices and brown sugar and combine until fluffy.

Place your frosting into a piping bag and pop in the fridge to set slightly.

Once the cupcakes have baked, place on a cooling rack and allow to cool for at least 15 minutes before icing.

When the cupcakes have cooled, pipe on your frosting and decorate with gingerbread stars.
