Chocolate Orange Chunk Cookies {blogmas day 6}

When I think of festive flavours, one of the first things that comes to mind is chocolate orange! Years and years of Terry's Chocolate Oranges in my Christmas stocking means it's one of my favourite Christmassy flavours! Unfortunately, Terry's Chocolate Oranges aren't vegan, but there are plenty of orange flavoured vegan chocolates around and I can't think of a better way to enjoy them than baked into a delicious batch of festive cookies!

To make 12 cookies, you will need:
- 175g dairy free butter
- 175g light brown sugar
- 1 flax egg
- 275g plain flour
- 200g orange dark chocolate
- 1 teaspoon bicarbonate of soda

Start by preheating your oven to 180 degrees Celsius, then line a baking tray with grease proof paper.

Next combine your butter and sugar in a bowl, stirring well until light and creamy. Once combined, add your flax egg to the mixture.

On a chopping board, roughly chop your chocolate bar into chunks, then add to the butter and sugar.

Now, add your flour and bicarbonate of soda to the mixture and stir well to form a loose dough.

Spoon your mixture on to the baking sheet, making 12 equal cookies - make sure to leave plenty of room between each cookie as they'll spread as they bake!

Now place your cookies in the oven to bake for around 15 minutes or until golden brown. The cookies should still be soft when they come out of the oven and you'll need to let them cool for around 10 minutes before digging in!

Now grab a cuppa, and settle down with a cookie (or two) in front of a good movie!
