Homemade granola has to be one of my favourite breakfast options, it's sweet, crunchy, healthy and surprisingly easy! But best of all, when you make your own granola, you get to pick the flavour so, to brighten up my breakfasts this December, I've created a granola that celebrates one of my favourite festive flavours - chocolate orange! This oil and refined sugar free granola is packed with plenty of festive flavour and crunch and it's definitely good enough to eat from the jar but, if you're feeling a little more sophisticated, serving it along side some almond yoghurt and fruit would make a perfect breakfast to enjoy this Christmas!
You will need:
- 225g rolled oats
- 50g puffed rice cereal
- 25g coconut sugar
- 50g smooth cashew butter
- 30ml fresh orange juice
- 1.5 teaspoons cacao powder
- 3 tablespoons maple syrup
- 2 teaspoons Sweet Freedom Choc Shot
- 50g dried cranberries
Start by preheating your oven to 175 degrees Celsius and lining a baking tray with baking paper.
Then, combine your oats, puffed rice and coconut sugar in a bowl.
In a separate bowl, combine your cashew butter, cacao powder, orange juice, maple syrup and choc shot to form a thick chocolate sauce.
Then, pour your chocolate sauce into the dry ingredients and stir well to ensure all of the oats and rice puffs are well coated.
Transfer the mixture to the baking tray and place in the oven for 10 minutes. After 10 minutes, remove from the oven to stir, add your dried cranberries and place back in the oven for a further 10 minutes.
Once baked, allow the granola too cool before transferring to an airtight container then, whether you're enjoying a healthy brunch or snacking straight from the jar, you're ready to dig in to some crunchy, chocolate orangey goodness!
