Roasted Butternut Squash Soup {oil free}

When it comes to talking about my favourite things about autumn, I could produce an endless list, and one of the things that definitely makes the list is the abundance of squash that the season produces. Throughout autumn, squashes are all over my Instagram feed, making flat lays festive and adding to that autumnal aesthetic that I love so much but, as a foodie, I'm far more interested in eating  my autumnal squash than looking at it! And you can't get more seasonal than the flavours of a spiced and roasted butternut squash packed into a cosy warming soup to be served with bread, of course. 

For soup to serve two you will need:
- 1 large butternut squash
- 2 teaspoons cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cinnamon
- 1/2 teaspoon turmeric
- 1/2 teaspoon sea salt
- a sprinkle of black pepper
- 1 medium red onion
- 1 clove garlic
- 2 vegetable stock cubes (in 350ml warm water)

Start by preheating your oven to 200 degrees Celsius, then cut your squash in half and remove the seeds. Sprinkle your butternut squash halves with an even coating of all of your spices, salt and pepper, then place in the oven to roast for 35 minutes.

Once the squash has been roasting for 25 minutes, roughly chop your onions and add to a pan along with the crushed clove of garlic and a splash of water. Sauté the onion and garlic until browned. 

Whilst the onion and garlic brown, prepare your vegetable stock and place to one side.

When the squash has finished roasting, remove the flesh from the skin and place the flesh into a blender along with the onion, garlic and vegetable stock, then blend until completely smooth. Once blended, you're ready to serve.

This flavour packed and fuss free soup makes for a a delicious bowl of autumnal goodness that's so easy, you'll be sat down with a cuppa in one hand, a bowl of soup in the other and a crusty loaf of bread in front of you before you know it!
