Vegan Cheese and Onion Pasty Recipe

I don't know about you, but I love a good cheese and onion pasty (greggs I'm looking at you)! But they're not vegan right? Well, it's true vegan alternatives aren't always as easily available as there animal product based counterparts, but I'm on a mission to make an equally delicious vegan version of every animal product I one enjoyed! So, here's my recipe for easy, tasty and cruelty free pasties!

You Will Need: 
- two sheets of jus roll puff pastry (yup, it's vegan)!
- vegan cheese (I used a mix of tesco's smoked soya cheese and the violife pizza  cheese)
- one medium baking potato 
- one large red onion 
- 200ml unsweetened almond milk
- one tablespoon dairy free butter
- one tablespoon plain flour
- 1/2 carrot
- two tablespoons sweetcorn 

Start by taking the pastry out of the fridge to allow it to reach room temperature and pre-heating the oven to 200 degrees.

Next pop the kettle on and chop your potato and carrot then boil for around 10 minutes. Once soft, transfer the potato, carrot to a blender, add the corn and blend until smooth. 

Next chop your onion and sautee (there's no need for oil, just add a little water)! Once soft, add 1/4 of the onions to the blended mix and blend until smooth. Leave the rest of the onions to one side until later. 

Now, add your butter to a pan and melt over a low heat, once melted add the flour followed by the almond milk. Continue stirring until smooth and slightly thickened then remove from the heat. 

Now it's time to add everyone's favourite ingredient - cheese! The amount of cheese you add is really up to you - so be sure to test the mix to check if it's to your taste. Of course, if you wanted to be a little healthier you could substitute some cheese for nutritional yeast which has a pretty cheese taste - but today I wanted to go all out on the cheese front! 

Once your cheese is melted into your sauce add the remainder of your onions and your blended mix and combine and allow to cool for about 5 minutes.

Whilst the mixture is cooling cut each of your sheets lengthways into three strips and then cut across the centre to split each strip into two. Then add some filling to half of each pair of pastry sheets - be sure not to over fill as you need to seal the edges! Once filled, place a clean pastry sheet on top and press firmly along the edges to seal. Finally prick the tops with a knife or fork and bake for about 20 minutes! 

Once perfectly golden and crispy it's time to enjoy! So, there you have it, perfectly flaky, cheesy and downright delicious pasties that are 100% vegan!
