Seven Things That Made Me Smile This Week

When I think about summing up this week, the two words that spring to mind are hot & tired. We seem to have skipped out spring this year and managed to jump straight from snow to sun and, after a super elongated winter, I'm pretty happy about it. It does seem a little typical that the great weather turned up just as I'm back at work and uni but hey, great weather is great weather so I can't complain. As always, the first week of work and uni was a little hectic and very long and, with my dissertation deadline getting scarily close, I've been spending most of my free time typing away but here are some of the other things that have managed to put a smile on my face this week.

Heat wave. We have had the nicest weather I've seen in ages this week and it's been bloomin' fabulous. Granted, I have been at work every day but there's still been plenty of sun for after-work tennis and walks and thankfully, the great weather decided to stick around for the weekend too. Here's hoping it lasts!

Blossom. All plants are beautiful but, I have to say, trees filled with pastel pink blossom are my absolute favourite. The world seems to have sprung to life this week, trees are getting green again, there's blossom everywhere and I'm loving it - the world just looks so much nicer when it's colourful!

BBQ bean burgers. Before going vegan, I wasn't really a burger person and the only element I was really interested in was the bread because, well, bread (ammiright). As a vegan, I'm really up for anything made of plants so this week I decided to whip up some bbq bean burgers that I loaded with hummus, ketchup, lettuce and tomato and then devoured them within about five minute! FYI, I used some pretty epic ciabatta buns, so the bread was still my favourite part but the burgers were pretty fab too - you can find my recipe here.

Class outside. This Thursday was the hottest day of the week and, because it was a full day at university, I was a little gutted to have to march myself off to the library to sit inside and power through my work all day and, let me tell you, by 3pm aka my last class of the day, I was done with being inside so I literally jumped for joy when my tutor decided to take the class outside! I enjoy chatting about books anywhere but it's definitely more enjoyable whilst sat on the grass in the sun!

Running. Jay and I got in such a great running groove in December and January but, with the truly horrendous weather we've had this winter, we ended up on a bit of a hiatus for the past couple of months. This Friday, however, the weather was brilliant and we decided to swap out the gym for a lovely outdoor run and, despite the fact that I managed to get my trainer stuck in the mud and ruin some new socks, it was a really great run and I'm so excited for the next few months of outdoor workouts.

Fajitas. Along with bean burgers, Fajitas just seem like the perfect fresh but filling evening meal to enjoy when it's hot outside so I've been digging in to my fair share this week and I don't plan on stopping anytime soon!

Working in the park. Although it feels like all I've been talking about lately, my dissertation deadline is fast approaching and I'm spending the majority of my free time writing and editing as much as I can. But with such nice weather outside, I really didn't fancy the prospect of spending my whole weekend at the desk so I decided to pack up my stuff and set up shop in the park. It actually made the world of difference to be outside in the sun and my work didn't feel like such a stressful chore, so if you're a struggling student, I'd definitely recommend taking your work outside!
