Seven Things That Made Me Smile This Week

It's officially the Easter Holidays and I've got a whole two weeks of no work and no university ahead of me - can I get a hallelujah?! Normally, I feel like the last week of work really drags but this week was really enjoyable and absolutely flew by! We've also been getting a lot more sun this week so Jay and I have been getting outside and enjoying the weather as much as possible. With a sunny week behind me and two weeks break ahead, there's been plenty for me to smile about this week.

Easter Sunday. Now, don't get me wrong, I love Christmas but, a holiday that's totally centred around eating chocolate, well, that's a holiday I can really get behind! This year I've ended up with a kind of ridiculous amount of vegan easter treats and, while I'm definitely making a big dent in the pile today, let's just say I'm going to be well stocked with chocolate for a long time (and there's no complaints here!).

Vanilla matcha. The almond milk matcha latte from Starbucks has been one of my favourite hot drinks for a while so, last week, when the barista told me that they'd changed the recipe and removed the sugar, I was a little worried I'd lost out on one of my favourite treats. I decided to try the new matcha nonetheless and with the addition of some sugar-free vanilla syrup, it's definitely my favourite  hot drink right now and I've been loving picking one up in my KeepCup before an afternoon walk in the park.

Salted caramel hot chocolate. Closely behind vanilla matcha for my favourite hot drink of the moment just has to be salted caramel hot chocolate, I mean, hot chocolate with salted caramel, how could you go wrong?! I happened to come across a vegan friendly salted caramel hot chocolate whilst shopping last week and it's becoming a firm favourite when I fancy an indulgent chocolatey treat before bed.

Daffodils. I'm aware that I keep raving about the start of spring and then retracting my joy when we're hit with (yet more) snow and yet, here I am again and, this time, I'm getting excited about all of the spring flowers that are popping up everywhere. Thanks to all the late snow, the daffodils were definitely delayed this year so finally noticing little yellow flowers popping up everywhere is adding some much needed brightness to the world in this very late spring.

Sweet 'n' salty peanut butter cookies. As an addict to both peanut butter and all things sweet 'n' salt, I really hit the nail on the head when I put together a ridiculously nutty, sweet 'n' salty peanut butter cookie recipe... (I'll just let that sink in). The cookies taste amazing and have that perfect soft but slightly chewy texture and with some epic cookies to snack on, the last week of work before the holidays didn't seem quite so bad. Lambs. Along with the late blooming spring flowers, I spotted my first lambs this week and they were unbelievably cute! I know all baby animals are adorable, but I think lambs are up there with one of the cutest little creatures and spotting a field full of fluffy white lambs never fails to put a smile on my face.

Homemade soup. This Saturday was cold, grey and really rainy so, after braving a walk in the park, I decided it was definitely soup making weather. There's definitely something therapeutic about cooking on a cold rainy day and vegetable soup was a truly fabulous recipe choice because there are few things more warming and comforting than digging in to a bowl of soup and tons of bread when it's raining outside.
