Seven Things That Made Me Smile This Week

There are only four more working days between me and a two week Easter break and, let me tell you,  I am ready. But in the mean time, having no university classes this week has given me a much needed break, my mornings have been spent working but my afternoons have been totally free for cycling, gym sessions, long walks and generally relaxing and I'm loving it! Thanks to my totally free afternoons, I feel like I've had a super long week (in the best way possible) so here are some of the best things I filled my week with.

Spring. This week we passed the 21st of March which means that we're officially in spring time - hallelujah! For the first time in a while, there's been absolutely no snow this week, the temperature has been going up and I've been spotting spring flowers everywhere. It seems like we're well on the way towards warmer weather and I couldn't be happier about it!

Daylight Savings. Along with the official start of spring, the clocks also changed today for Daylight Savings which means we're finally in for some longer days! The darkness is by far the worst part of winter and I never fail to notice a boost in my mood and energy when the days are brighter and longer. Plus, as a food blogger, more than anything, I'm looking forward to the evenings actually being bright enough to photograph my evening meals!

Easter chocolate. As it's only a week until Easter, Jay and I have been on a chocolate buying mission this week to make sure we're fully stocked by next weekend. Enjoying Easter as a vegan seems to be getting easier year by year and this Easter I've managed to find a ridiculous amount of vegan friendly Easter chocolate to enjoy. I've definitely gone just a little overboard and have way more chocolate than I can possibly eat but, hey, I love a challenge.

10k steps. Although Jay and I work out most days, when we're not working out, we can find ourselves being a little on the lazy side so, now that the weather's getting better, we've been making an effort to head out for an evening walk every day to hit the 10,000 step mark. Working in an office means that getting steps in throughout the day isn't all that easy, so making some time each evening to get out for a walk has been really nice and, I have to say, seeing my Fitbit get over 10k steps each day is really satisfying.

Banana nice cream. Nice cream has been making a comeback in my life this week and I am obsessed. I've been enjoying fruity nice cream for lunch most days this week and it's seriously delicious! Every time I devour a bowl, I'm left totally in awe that simply blending up frozen bananas can make such a thick, ice-cream-y meal, y-u-m.

Fresh rainy days. Along with warmer weather, spring always seems to bring its fair share of rainy days, but this week I've been finding the rain surprisingly refreshing. Rain always feels totally different when it's not freezing cold outside and you just can't beat the fresh, earthy smell left in the air after a night of rain.

Almond butter. Normally, I'm a peanut butter gal through and through, I mean, how could you go wrong with peanut butter, it's blooming' delicious! But lately I've been mixing up my nut butter choices and almond butter is definitely becoming a firm favourite. It definitely hasn't overtaken peanut butter for top spot but I am totally obsessed with almond butter and raspberry jam on toasted sourdough at the moment.
