Seven Things That Made Me Smile This Week

After a few week of truly terrible weather, I was beyond excited to enjoy a week where the temperature was at least 10 degrees most days - exciting right?! We did get hit by more snow at the weekend but we're definitely moving in the right direction and, for that, I am grateful. Being just around the corner from a two week break from work, the weeks are feeling long but I'm keeping my eye on the prize and powering through the last couple of weeks. As usual, I'm trying to enjoy myself in the process so here are some of the things that made me smile this week. 

Easter Break from uni. For some reason, although semester one doesn't have any breaks, semester two always feels way longer so, by this week, I was feeling very in need of the mid-semester break. There's still two weeks of work until I'm fully on holiday but, with no classes, my schedule is already feeling way lighter. I'm seriously excited to have four weeks break from classes - granted, it is four weeks of dissertation writing but, hey, we'll just ignore that fact for now!

All the tea. As always, the last week of term was a little bit of a drag but, as there's nothing in life that a cuppa can't solve, I've been using all the tea to get me to through the week and it worked a charm. No matter how tired, grouchy or unmotivated I may be feeling, give me a cuppa and I'm like a totally new person!

Smoothies. Smoothies are, without a doubt, one of my favourite ways to start the day but, when the weather is cold I just can't face a cold breakfast but, for the first time in a long time, mornings this week were actually warm enough for smoothies. Lately I've been loving the banana, plum, pineapple and spinach combination, because it's a sweet start to the day that never fails to put a smile on my face.

Light mornings. Along with warmer weather, mornings have been getting lighter by the day and I am so here for it! It's actually snowing as I type this post so I'm not entirely convinced that spring is here quite yet so, until it decides to arrive, I'm enjoying any signs of brighter weather that we get and, as an early bird, being able to enjoy the sunrise as I get ready instead of spending hours in the dark is making me so happy.

Nutritional yeast. Like most vegans, I am more than a little bit addicted to nutritional yeast, I don't know how it tastes so good but there's literally no savoury meal that isn't made 10x tastier with the addition of nooch. After running out and being nooch-less for a couple weeks, my amazon order finally showed up this week and, let me tell you, pasta has never tasted so good!

Active weekends. As a sporty person, being active is really important to me and there's nothing I hate  more than being cooped up inside for too long. I try to stay active all week but, as I work in an office, it's not always possible to be as active as I'd like so I always try to make the most of my weekend. This weekend we were hit with yet another snow storm so our plans for a long bike ride were put on hold, but we managed to smash out a gym session and took advantage of a break in the snow for an afternoon run which made me very happy because my Saturday night pizza always tastes even better after a busy day.

Easter baking. I mean, it doesn't take much to get me in the mood for baking but, whenever there's a holiday on the horizon, I'm happy to take the excuse to indulge in even more baking than usual. With Easter just around the corner, I decided this weekend was the perfect time to perfect some Easter inspired recipes and I whipped up some (seriously delicious) vegan creme eggs and a batch of hot cross buns, both of which tasted so good and really got me excited for Easter to arrive.
