Easy Vegan Pancakes {oil & refined sugar free}

It's officially pancake day which is, in my opinion, one of the best days of the year I mean, how could a day centred around eating pancakes not be totally fabulous?! Perfecting a healthy vegan pancake recipe has definitely been a trial and error experiment (emphasis on the error!!). There have been a fair few pancake scrambles as well as some pancakes that just didn't taste good, but, after investing in a good quality non stick pan (which is essential to oil free pancakes), I've finally perfected a pancake recipe that's healthy, super simple to make and, most importantly tastes great!

To Serve One You Will Need:
- 75g oats
- 1 ripe banana
- 100ml almond milk
- 1 teaspoon bicarbonate of soda
- toppings of your choice

Start by adding all of your ingredients to a blender or food processor and blend to form a smooth batter.

Once you've got a batter, spoon enough batter for one pancake into your non stick pan and cook over a medium heat.

Once bubbles start to appear on the surface of the pancake, flip and cook on the other side until golden brown, then transfer to a plate and repeat the process until you've used up all of your batter.

Once your pancakes are cooked, it's time to load up on toppings! I went all out with banana, strawberries, granola, peanut butter and syrup (it is pancake day after all). But lemon juice and coconut sugar or just plain maple syrup are some of my favourites too.

Once you're loaded up with your favourite toppings, all that's left to do is grab a cup of coffee and dig into your stack of pancakes.

  1. Thank you for making this recipe for one person!!! I live with non-vegan flatmates and literally could not find any recipes for just one person that were vegan and don't want to be living off pancakes for the rest of the week. Am going to buy the ingredients now! xx
