Apple and Cinnamon Bagels

Two things in life I truly love are bread and cinnamon so, when they're combined, it's a dangerous combination because I really cannot get enough. I'm sure it's no surprise then, that cinnamon bagels are one of my (many) food addictions. Personally, I'm a sweet bagel kind of gal, so this bagel recipe seemed like the perfect place for one of my favourite fruity combinations, apple and cinnamon. If, like me, you're a lover of all things cinnamon, this is the bagel recipe for you!

To make 6 bagels you will need:
- 175g wholewheat flour
- 175g bread flour
- 1 sachet instant yeast
- 3 teaspoons cinnamon
- 3 teaspoons coconut sugar
- 75g dried apple
- 225ml warm water

Start by preheating your oven to 200 degrees Celsius. Then roughly chop your dried apple into bite sized pieces.

Sieve together your flour, cinnamon, coconut sugar and yeast then add your warm water and mix to form a dough. 

Once a dough has formed, fold your apple pieces into the mixture and turn the dough out onto a well floured surface. 

Knead the dough well for a few minutes and form the dough into a smooth ball. Place the dough in a well floured bowl, cover and place to one side to rise for around an hour.

After the dough has doubled in size, split the mixture into six equal pieces. Roll each piece into a sausage shape then join the ends together to form a bagel shape. Make sure you pinch the ends together well to prevent them from separating.

Place the bagels to one side for around 10 minutes to allow them to rise a little more.Whilst the bagels rise, fill a large pan with water, add 2 tablespoons of coconut sugar to the pan and bring the water to a boil. Once the water is boiling, use a slotted spoon to add your bagels to the pan one at a time. Leave the bagels in the water bath for 30 seconds per side, then transfer to a baking paper lined tray.

Now place your bagels in the oven and allow them to bake for 20 minutes, turning them over half way through. 

Once baked, slice, place in the toaster, lather with peanut butter and jam and, as all bagels should be, serve with a hot cup of coffee.
