Coconut & Almond Granola {oil and refined sugar free}

There's seriously nothing I don't love about granola, it's sweet, spicy & crunchy, I mean, what more could you want?! It makes the perfect cereal, topping for yoghurts and smoothie bowls and, lets be honest, more often than not, a delicious crunchy snack to mindlessly munch on whilst waiting for dinner to cook. Unfortunately, it can be quite hard to find a granola in the supermarkets that is both healthy and vegan as all of the 'healthier' options contain honey and a lot of the vegan options are filled with a ton of sugar and oil. But luckily, it's super easy to whip up a delicious batch of granola in your own kitchen. After enjoying the most delicious coconut granola on top of my French toast at Brammibal's Donuts, I was inspired to put together a granola with all of my favourite flavours, coconut, almond, maple and of course, cinnamon!

For this recipe you will need:
- 250g rolled oats
- 40g flaked almonds
- 25g coconut flakes
- 75g pure maple syrup
- 20g natural almond butter
- 2 tablespoons pumpkin seeds
- 1.5 tablespoons desiccated coconut
- 2.5 teaspoons cinnamon
- 1 teaspoon vanilla extract

To get started on this super easy granola recipe, preheat your oven to 180 degrees Celsius. Then add your coconut flakes to a pot along with one tablespoon of maple syrup and half a teaspoon of cinnamon. Heat the coconut gently for a couple of minutes to caramelise slightly and allow the flakes to sweeten. Once the flakes have become slightly translucent, remove from the heat.

Next, add your oats to a bowl along with the desiccated coconut, almond flakes, pumpkin seeds and cinnamon and stir to combine. Once combined, add the caramelised coconut flakes and stir through the mixture.

Now begin adding your wet ingredients. Start by stirring through the almond butter - makes sure you give it a good stir and coat the dry ingredients to avoid any lumps. Now add your maple syrup 25g at a time - stir throughly after adding each 25g to ensure the syrup coats all of the dry ingredients. Finally add your vanilla extract and, once again, stir through well.

Now cover an oven tray with some baking paper and spread the granola over the tray in an even layer then place in the oven to bake. The granola should bake for around 25 minutes or until completely golden - stir the mix halfway through to get an even, crunchy bake.

Store your granola in an airtight container and enjoy!
